Among the many special dishes in Hanoi, pho is the most popular. It is a special kind of Vietnamese soup. We can enjoy pho for all kinds of meals during the day, from breakfast to dinner, and even for a late night snack. Pho has a very special taste. The rice noodles are made from the best variety of rice. The broth for pho bo (beef noodle soup) is made by stewing the bones of cows for a long time in a large pot. Quang noodle soups differ than most normal noodle soups in that the soups have just enough broth to barely cover the noodles. Unlike other Vietnamese noodle soup bowls whose broth will cover the noodles almost completely, Quang noodle broth is barely enough to slurp during the meal. If you do not eat a Quang noodle bowl fast enough, the broth will generally quickly be soaked up by the noodles. Quang noodle soups are generally pork and dried shrimp broth based, although some regional and family recipes will use chicken and even duck. What makes Quang noodle soups unique is the richness of the broth, the lack of it and the crushed peanut toppings on the noodles.

The mystery of Quang noodle is in that pot above. This is ‘nuoc sot mi quang’ or Quang noodle sauce. This makes the stock slightly sweet and a smidgen spicy. This dish's ingredients include rice, vegetables and meat. After being soaked in water, the rice is ground to a fine powder and made into attractive smooth white noodles. Accompanying vegetables are water morning-glory, cress, young banana flowers and herbs. Especially, the famous Tra Que savory of Quang Nam Province will give the dish more flavour. You can use pork, chicken, fish, crab or shrimp to make the broth. If chicken is chosen, the meat is separated, seasoned and stir-fried while the bones are stewed. Finish the stock by adding cooked chicken meat.There are many Quang noodle restaurants in Quang Nam and Da Nang. Each area is famous for one certain recipe. For example, Thanh Chiem Village in Dien Ban District, Quang Nam Province is known for shrimp noodle, while chicken noodle is at its best in Tuy Loan, Hoa Vang District, Da Nang City.Bạn có thể tham khảo.

Vietnam is famous with its traditional and delicious dishes. All of them easioly bring to anyone's mouth indeed, but as myself, I enjoy spring rolls best.

Spring rolls are lightly fried rice - paper rolls, smaller and crispier than Chinese egg rolls but more flavorful. They are filled with highly seasond morsels of crab, shrimp, chopped vegetables, onion, mushroom, vermicelli and eggs. To prepare them, place the above mentioned filling on a thin rice pancake, roll up then fry.

Finally, spring rolls, when fully prepared, are wrapped into somes kinds of fresh vegetables, then doused in fish sauce. My mother ussually cooks spring rolls for me, espeicially on important days in year, such as Tet holiday. When I eat them, i feel all of my mother's love that she reserves for me.

To me, they're like the most speicial dish in this world.

A story: Turtle and rabbit

On a beautiful autumn morning, on one side of the river a forest with a turtle is practically running. Rabbit passing by, see that laughing turtle:
- Sluggishly like slug but also run!
Play rabbit said so, Tortoise sad but calm reply:
- Do not mock me. You try to compare a wrong?
Rabbits with bearded beard:
- You dare run with me? Be right. I will take you half way. Come on!
Turtles do not say half a word. He knew he was slow. People have said: "Slow as a turtle". So, when the order was issued, the turtle moved step by step, rabbits chuckled. He thought: "It is necessary to hurry, wait for the Tortoise to reach the end, I just fired a win is already won." Thought that, rabbits we go to chase butterfly, cut flowers, look at heaven and earth as nothing happens.
Suddenly thought of the contest, looked up to see the Turtle to the destination, Rabbit hurry yellow gold tripod trip four feet away as a streak shot. But not anymore, Turtle has come to the destination long.
The story of "Turtles and Rabbits" has left us with a profound lesson: no self-esteem, no bragging boast, knowing who you know, persistence in everything will succeed.

Pho is one of the Vietnamese traditional food. The most delicious and typical brand of Pho in Vietnam is Ha Noi Pho with wonderful flavor. Pho is made from rice noodles, beef or chicken and other spices. Pho is a noodle soup; therefore, it’s better when being added with beansprout. Eating Pho with family not only reflects Vietnamese tradition but also creates cozy atmosphere. At weekends, my friends and I usually go to a cafeteria to enjoy Pho because Pho is served at many restaurants in Vietnam. There are two main kind of Pho: noodle soup with beef and sliced chicken, both of them are delicious and high nutrients. Pho is favorite food of almost Vietnamese and often served as breakfast. Moreover, Pho is popular in international market for its pleasant taste and reasonable price. Foreign tourists visit Vietnam and they really like the taste of Pho here. I am very proud of it. In near future, I hope Pho will be more famous in other countries so that foreigners can enjoy this cuisine and understand about Vietnamese culture.

Tet is a national and family festival. It is an occasion for every Vietnamese to have a good time while thinking about the last year and the next year. At Tet, spring fairs are organized, streets and public buildings are brightly decorated and almost all shops are crowded with people shopping for Tet. At home, every is tidied, special food is cooked,offerings of food, fresh water, flowers and betel are made on the family altar with burning joss- sticks scenting the air. First-footing is made when the lucky visitor comes and children are given lucky money wrapped in a red tiny envelope. Tet is also a time for peace and love. During Tet, children often behave well and friends, relatives and neighbors give each other best wishes for the new year.

The most common English translation of “Chả giò” is spring roll, though this is just a fancy name since the food has nothing to do with spring.

The main ingredients of a roll of “chả giò” are commonly seasonalground meat, mushrooms, and diced vegetables such as carrots andjicama, rolled up in a sheet of moist rice paper. The roll is then deeply fried until the rice paper coat turns crispy and golden brown. The ingredients, however, are not fixed. The most commonly used meat ispork, but one can also use crab, shrimp, sometimes snails (in northern Vietnam), and tofu (for vegan chả giò). If diced carrots and jicama are used, the stuffs inside the rolls are a little bit crunchy, and match well with the crispy fried rice paper. Nevertheless, the juice from these vegetables can soon cause the rolls to soften after only a short time. To keep the rolls crispy for a long time, mashed sweet potato or mung beans may be used instead. One may also include bean sprouts and rice vermicelli in the stuffing mix, yet, this is a rare practice. Eggs and various spices can be added based on each one's preference.

  

“Chả giò rế” is a rare kind of “chả giò” that uses “bánh hỏi” (thin rice vermicelli woven into a sheet) instead of rice paper. The stuffs inside the roll are the same as normal chả giò, and the roll is also deeply fried. Since the sheets of “bánh hỏi” themselves are not very wide, and the rice vermicelli is too easily shattered, “chả giò rế” rolls are often small and difficult to make. They are only seen at big parties and restaurants.

No matter what time day or night, a steaming bowl of Pho noodle soup is never hard to find in Vietnam. Just as Pad Thai in Thailand, this dish in Vietnam is one of best delicious Vietnamese Food Pho in this country. And everyone around the world always wants eating Pho when they have a chance to go to Vietnam.

Pho consists of flat rice noodles, meat-based broth. The dish is usually accompanied by basil, lime, chili, and other extras on the side so that eaters can season the soup to their own taste. The balanced tastes of sweet, salty, spicy, and citrus are highly contagious; Pho usually becomes an instant favorite for anyone visiting Vietnam.

Some squeamish eaters may balk at authentic Vietnamese Food Pho which is made from beef bones, tendons, tripe (stomach), fat, and sometimes ox tail. Bones and lesser-quality cuts of meat are simmered for hours to produce the soup broth. With popularity of Pho, many chain restaurants catering to tourists now omit ingredients that may frighten business away. Broth is commonly made from beef, pork, or chicken bones; only lean pieces of meat are added.

Despite its popularity, opinions differ about the origins of Pho soup. Culinary experts generally agreed that the rice noodles were brought by Cantonese immigrants from Guangdong province in Southern China. Some say the soup itself was influenced by the French during their colonization of Vietnam, however locals dispute this theory. The Vietnamese claim that Vietnamese Food Pho originated in the Nam Dinh province just southwest of Hanoi and then spread to other parts of the country.

Refugees fleeing Vietnam in the 1970s carried pho to the West where it grew quickly in popularity. Even President Clinton enjoyed a bowl of Pho during his historic visit to Vietnam.

Vietnamese sometime wonder how westerners can eat bread days after days but the vice-versa also holds water. Most tourists coming to Vietnam are amazed at the omni-presence of rice and rice-related dishes.

 

Rice is an object for worshipping in many temples of Vietnam. It is said to originate from the Mother Godness Worshipping, the most long–standing belief in Vietnam. Yes rice is a big thing out here. The very first written characters constituting the word “Happiness” in ancient Vietnamese is the image of many rice plants and a square symbolizing a paddy field. Rice is not only happiness, it really forms Vietnamese.

Accordingly, many main dishes and snacks in Vietnam are made from rice: boiled rice in daily meal, rice porridge, steamed rice, glutinous rice cake, well-known Banh Chung (square cake) and uncountable made-from-rice dishes from every region in Vietnam.

Even the universal Pho that you definitely hear about is made from rice as well. Rice is the center of everything, like a sun lying in the center of the whole solar planet.

Considering rice important, Vietnamese has been always developing their farming method and new rice genres. Many Vietnam rice varieties exported to all over the world are renowned for their distinctive flavor, yet only when coming to Vietnam and have boiled rice with soya sauce pickled egg-plants, your adventure to Vietnam is considered perfect.

I have many hobbies, but I reading most. Books are always a good friend to me. It is a good way to improve my vocabulary by exposing many new words. By reading, I get better at concentration because it requires me to focus on what I am reading for long periods of time. It also opens up the knowledge door for me. Reading books tells me about the world’s history, let me see the structure of the human body, or bring me a story of Sherlock Holmes. I think reading is one of the most interesting indoors activities.
