6 c seedless watermelon chunks or balls
1 Tbsp lemon juice
1 Tbsp lime juice
½ c ginger ale
1. PUREE the watermelon, lemon juice, and lime juice in a blender. Slowly pour into the ginger ale and mix.
2. POUR into an 8" x 8" metal pan (not nonstick). Cover with plastic wrap and freeze for 1 hour.
3. STIR with a fork, breaking up the chunks. Cover and return to the freezer. Stir every 30 minutes for 2½ hours or until the mixture is evenly icy and granular.
4. SPOON into dessert bowls.

Corn On The Cob With Chile-Maple Glaze
PREP TIME: 10 minutes
TOTAL TIME: 35 minutes
SERVINGS: 4
⅓ c maple syrup
2 Tbsp butter
2 tsp lime juice
1 small chipotle chile pepper in adobo sauce, finely minced (about 1 tsp)
1 tsp reduced-sodium soy sauce
¼ tsp ground cumin
¼ tsp salt
4 ears corn on the cob, husked
1 Tbsp fresh cilantro, chopped
1. COAT a grill rack with cooking spray. Preheat the grill.
2. COMBINE maple syrup, butter, lime juice, pepper, soy sauce, cumin, and salt in a medium saucepan.
3. SIMMER mixture over low heat and cook for 12 to 14 minutes, or until thick and syrupy.
4. PLACE corn on the grill rack and grill for 2 minutes.
5. BRUSH corn with some of the mixture and turn a quarter turn. Continue brushing and turning corn every 2 minutes for 6 to 8 more minutes, or until corn is well marked and cooked through. Transfer corn to a serving platter and brush with remaining syrup.
6. SPRINKLE with cilantro, if using, and serve immediately.
Note: Chile oil sticks to the skin, and water alone won't wash it away. After handling chiles, be sure to use soap and water to wash your hands.

Green Tea And Ginger-Dew Pop
SERVINGS: 6
1" piece fresh ginger, peeled
2 c water
2 green tea bags
2 Tbsp honey
4 tsp fresh lime juice
1 c honeydew chunks
½ c coconut water
6 ice pop molds
1. CUT ginger into slices. Add to saucepan with regular water.
2. BRING to a boil. Boil 2 minutes. Remove from heat.
3. ADD tea bags and steep 3 minutes. Discard tea bags and ginger.
4. STIR in honey and lime juice. Let cool.
5. PUREE honeydew chunks and stir in coconut water. Add to tea mixture and stir.
6. DIVIDE among 6 ice pop molds and freeze at least 6 hours.

1. HEAT grill to medium and coat rack with cooking spray.
2. PLACE peaches cut side down on grill rack and grill until lightly browned and tender, about 10 minutes, turning once. Remove and arrange 2 halves on each of 4 dessert plates.
3. CRUMBLE macaroons into cavities and over tops.
4. SPOON caramel topping evenly over all.

TOTAL TIME: 15 minutes + standing time

4 c peaches, peeled and sliced
3 Tbsp honey
1 Tbsp lemon juice
½ tsp unflavored gelatin
1 c heavy cream, whipped
Food processor
Ice cream maker
1. PLACE the peaches in a medium bowl. Add honey and lemon juice. Toss well. Cover and set aside for 2 hours.
2. DRAIN the peaches, reserving the juices. Transfer to a food processor.
3. POUR ¾ cup of the reserved juice in a small saucepan. Sprinkle with gelatin and let sit for 5 minutes to soften. Stir over low heat until gelatin is completely dissolved.
4. ADD gelatin mixture to peaches and process until finely chopped. Transfer the peach mixture to a bowl and refrigerate until it begins to thicken.
5. FOLD in whipped cream. Pour into the canister of an ice cream maker. Freeze according to the manufacturer's instructions.

4 lobsters (1¼ lb each)
3 ears corn, shucked and cut into thirds
1. SPREAD butcher paper over picnic table.
2. PLACE potatoes in stockpot big enough to cook 2 lobsters at the same time and add cold water until two-thirds full. Add onions, lemons, thyme, bay leaves, and salt. Bring to a boil.
3. ADD two lobsters, cover, and cook at a gentle boil until cooked through, about 10 to 12 minutes, uncovering after 5 minutes. Remove lobsters to table (no plates necessary). Repeat with 2 more lobsters.
4. ADD corn and cook until corn and potatoes are tender, about 3 minutes.
5. TRANSFER corn and potatoes to table (discard remaining contents of pot) and serve with lemon wedges.
