Lunar New Year or Tet is a traditional festival in Viet Nam. It's the biggest festival in Vietnam. It is held in late January and early February. It's the time when family members reunite and celebrate the occasion together. Tet's preparation lasts many weeks. One or Two dáy before Tet, people make chung cake and Tet cake. Every one is busy buying new clothes, cleaning and decorating their houses and cooking some trditional food such as: jam, picked onion, gio, spring roll, frozen meet,..., Home is often decorated with plants and flowers at this time. Peach blossom is traditional at Tet in the north.While apricot blossom is traditional in the South. Besides, the kumquat tree with its ripe deep orange fruits is popular throughout the country. On the last of the year, preparation for new year is completed. Families have a New Year's Eve supper together and expect the New year's eve. At the mid-night, everyone performs ritusl offering to the ancestor on the New Year's Eve. People believe that what they do on the first day of the year will influence their luckiness during the whole year. On the first day of the year , people visit relatives, friends. neighbors,.... Children receive their lucky money inside red envelops. Some people go to pagoda to pray for a happy new year for their family, Tet is really a time of fun and festival throughout the country

This is a real Vietnamese curry. Although adapted from the Indian, which is always made with white potatoes, the Vietnamese version has the option of using white or sweet potatoes, the latter being greatly favored by the Vietnamese. The Indian in- fluence is greatest in the South, where curried dishes are more popular than elsewhere in Vietnam.

This is usually served with noodles as a party dish. When it is part of a family meal, it is eaten with rice. Bach serves this to her children for breakfast, when it is served with French bread–another influence on the cuisine of Vietnam.

If you are using fresh lemon grass, simply remove the outer leaves and upper two-thirds of the stalks, then cut the remainder into 2-inch lengths. If you are, using, it must be soaked in warm water for 2 hours, then drained and chopped fine.

Combine the curry powder, black pepper, sugar, add salt and marinate the chicken in the mixture for at least 1 hour. Heat the oil and fry the potatoes over high heat until brown. (It is not necessary to
completely cook potatoes at this point, only to brown them.) When well browned, remove from the pan and set aside until ready to cook the curry. Pour off most of the oil from the pan, leaving 2 tablespoons for cooking the chicken.

Heat 2 tablespoons oil over a high flame. Fry the garlic for a few seconds, then add the bay leaves, onion, and lemon grass; stir briefly and add the marinated chicken, stirring long enough to sear the meat slightly. Add the 2 cups of water and carrot, then cover and bring to a boil. Turn the heat down and simmer for 5 minutes; uncover and stir, then cook, covered, for another 10 minutes. Remove the
cover and add the prefried potatoes, the coconut milk, and the milk. Cover again and simmer another 15 minutes. Serve with rice, Rice Sticks, or Japanese Alimentary Paste Noodles.

In the modern life, there is an increase in the people leave the countryside and migrate to the city. The objective reason is that in the city, it brings them comfortable life and favorite job. Subjective causes are due to the following disadvantages rural areas bring about push residents away. To begin with, there is no denial that rural infrastructure is not modern and advanced. Roads are quite narrow and degraded. Schools, hospitals are not cared much and remodeled. Especially the quality teachers and doctors here are just little so the inhabitants have less opportunity to develop in all way than in the urban area. Last but not least, the biggest disadvantage in rural areas is that job opportunities are so race. The main job is craft, farming, which bring a relatively small income. With that salary, we can only live through the day, not afford for services, shopping, entertainment… In conclusion, besides the positive aspects, life in the countryside is very much. disadvantage. We all need to consider carefully before choosing where to live.

Vietnam is a country that has thousands of years of history. Like many other countries in the world, Vietnam has a culture of its own identity that carries the most typical is the Lunar New Year. It is these features that make manners, shape and identity of the people in Vietnam.

Lunar New Year is the most important occasion in Vietnam. Lunar New Year, according to the Vietnamese called Tet Nguyen Dan. "Nguyen" is to start, "Dan" is a new day. "Tet Nguyen Dan" is to start a new year, to welcome Spring with everything in its newest appearance. A new year comes with goodluck and in the mean time, all of the badluck will be gone, together with the passed year. "Tet Ta" (Lunar new year) is affected by Chinese Lunar New Year and East Asia Traditional Circle so that "Tet Ta" comes after New Years Eve. According to the old rule: 3 even years/a month of the Lunar Calendar, so the first day of the year is never before Jan 21st or after Feb 19th. Normally, this day will come from about the end of Jan to mid of Feb. The Lunar New Year lasts for 7-8 days of the passed year and 7 days of the new year.

According to East Asian culture and history of China, the origin of Lunar New Year from Three Sovereigns and Five Emperors and change from time to time. According to folk beliefs, the New Year started from the concept "Thankfully the rain to sunshine", as well as originating from "tiet" (weather) upon under the operation of the universe, expressed in the cycle times the Spring - Summer - Fall - Winter, which, with a very special meaning for an agricultural country like Vietnam. Last summer, my family and I had a trip to Dalat, which was dubbed as the land of fog. We came to Da Lat by bus because we wanted to visit the scenery along the way. Dalat appeared as a city in the clouds, and we spent all our time here to visit famous places. We visited Bao Dai Palace - the residence of the last king of the Nguyen Dynasty with his family. The whole architecture was is European style, and there were a lot of beautiful flowers which were planted around the Palace. The ground floor was the place for meetings, banquets, greeting foreign guests and government officials. Bao Dai's office, library, games room were also located there. In the office there was a huge portrait of King Bao Dai and Prince Bao Long - who was chosen as the successor of the throne. The entire second floor was the resting place of the royal family, including bedrooms of the king, queen, and their children. There was also a place for the king and queen to watch the moon called the Moon Tower. The next place that we visited was Mount Langbiang, where there was a legend about a love story between a girl called Biang and her lover Lang. Their love was forbidden by their families, so they chose to die in order to stay together forever. Next, we were brought to the top of the Radar hill by a Jeep; from the top of the hill we can see Dalat from above through a dim layer of fog. In the distance were the Golden and Silver streams, and they were like two strips of silk that ran across the forest. After 3 days of exploring Dalat, we finally had to go back home. The clouds and fog in the city still lingered in my mind, and I could not wait for my next visit to Da Lat.
