Where vegetarian meals are served in courses, the parts are usually fitted into an unchangeed pattern : soup, main course, salad and dessert. Many vegetarian cooking books have imposed this old structure onto the vegetarian diet and try to find a "meat substitute". However, the first thing to do when considering the vegetarian cuisine is to get free of these ideas.
