It may already be too late to save some rivers and lakes, but others can still be saved if the correct action is taken at once.

Centuries ago, man discovered that removing moisture from food helped to preserve it, and that the easiest way to do this was to expose the food to sun and wind. In this way the North American Indians produced pemmican (dried meat ground into powder and made into cakes), the Scandinavians made stock fish and the Arabs dried dates and apricots.
All foods contain water - cabbage and other leaf vegetables contain as much as 93% water, potatoes and other root vegetables 80%, lean meat 75% and fish anything from 80% to 60% depending on how fatty it is. Fruit is sun-dried in Asia Minor, Greece, Spain and other Mediterranean countries, and also in California, South Africa and Australia. The methods used vary, but in general the fruit is spread out on trays in drying yards in the hot sun. In order to prevent darkening, pears, peaches and apricots are exposed to the fumes of burning sulphur before drying. Plums for making prunes, and certain varieties of grapes for making raisins and currants, are dipped in an alkaline solution in order to crack the skins of the fruit slightly and remove their wax coating, so increasing the rate of drying.
Nowadays most foods are dried mechanically; the conventional method of such dehydration is to put food in chambers through which hot air is blown at temperatures of about 110°C at entry to about 45°C at exit. This is the usual method for drying such things as vegetables, minced meat, and fish.
Liquids such as milk, coffee, tea, soups and eggs may be dried by pouring them over a heated horizontal steel cylinder or by spraying them into a chamber through which a current of hot air passes. In the first case, the dried material is scraped off the roller as a thin film which is then broken up into small, though still relatively coarse flakes. In the second process it falls to the bottom of the chamber as a fine powder. Where recognizable pieces of meat and vegetables are required, as in soup, the ingredients are dried separately and then mixed.
Dried foods take up less room and weigh less than the same food packed in cans or frozen, and they do not need to be stored in special conditions. For these reasons they are invaluable to climbers, explorers and soldiers in battle, who have little storage space. They are also popular with housewives because it takes so little time to cook them.

The ability to conduct electricity is one of the key properties of a metal. Other solid material such as silicon can conduct electricity but only effectively at certain temperatures. Also, some substances such as salt (sodium chloride) can conduct when molten or when dissolved in water. The ability of metals to conduct electricity is due to how their atoms bond together. In order to bond together the metal atoms lose at least one of their outermost electrons. This leaves the metal atoms with a positive charge and they are now strictly ions. The lost electrons are free to move in what are known as a sea of electrons. Since the electrons are negatively charged they attract the ions and this is what keeps the structure together.
An electric current is a flow of charge and since the electrons in the sea of electrons are free to move they can be made to flow in one direction when a source of electrical energy such as a battery is connected to the metal. Hence we have an electric current flowing through the wire, and this is what makes metals such good conductors of electricity. The only other common solid conducting material that pencil users are likely to encounter is graphite (what the ‘lead’ of a pencil is made from). Graphite is a form of carbon and again the carbon atoms bond in such a way that there is a sea of electrons that can be made to flow as an electric current. Likewise, if we have an ionic substance like salt we can make the electrically charged ions flow to create a current but only when those ions are free to move, either when the substance is a liquid or dissolved in water. Electrical insulators are substances that cannot conduct electricity well either, because they contain no charged particles or any charged particles they might contain do not flow easily. Water itself is a poor conductor or electricity as it does not contain a significant amount of fully charged particles (the ends of a water molecule are partly charged but overall the molecule is neutral). However, most water we encounter does contain dissolved charged particles, so it will be more conductive than pure water. Many of the problems that occur when touching electrical devices with wet hands result from the ever-present salt that is left on our skin through perspiration and it dissolves in the water to make it more conductive.
